8 medium | multi coloured tomatoes, seeded, diced (about 2 cups) |

1 clove | garlic, minced |
1 tsp | red wine vinegar |
½ tsp | salt |

½ | baguette sliced into eight ¾" slices on the bias |

4-5 big snips | Jute Gardens Micro Basil |
1 oz | shaved parmesan cheese |
Mix together the tomatoes, olive oil, garlic, red wine vinegar, salt. Set aside. You can make this up to an hour ahead.
Lay the baguette slices out on a tray. Drizzle with olive oil and season with salt and pepper.
Preheat your grill to high heat.
Toast the bread on the grill for 5-7 minutes, turning frequently until golden brown with a little char. Transfer the toasts to your serving platter.
Just before serving, toss the Jute Gardens Micro Basil into the marinated tomatoes and mix it up. Spoon onto the pre arranged toasted slices, trying not to get too much juice onto the toasts. A slotted spoon works well for this.
Top with parmesan shavings and serve immediately.
